French Onion Soup

Ingredients in bold can be purchased from Grobe Fruit Farm when in season. Please call to see if we have the items available.

  • 2 1/2 lb. sweet onions
  • 4 tbsp. margarine
  • 1 tbsp. flour
  • 1/4 tbsp. salt
  • 13 oz. beef broth
  • 13 oz. chicken broth
  • 1/4 cup dry sherry
  • 1 cup water
  • 1 loaf French bread
  • shredded mozzarella cheese

 

Slice onion in hot margarine and cook for 15 minutes, or until lightly brown and very tender, stirring occasionally. Stir in flour and salt. Add beef and chicken broth, sherry, and water. Heat until boiling. Meanwhile, slice French bread 3/4 inch thick and toast it.

Spoon onion mixture into oven safe soup bowls. Place slice of toasted French bread on soup in each bowl, top with shredded cheese. Place soup bowls on cookie sheet for easier handling. Bake soup at 450 degrees or until cheese is melted and top is browned. Use caution when serving.
