Peachy Cream Dessert

Ingredients in bold can be purchased from Grobe Fruit Farm when in season. Please call to see if we have the items available.

1 cup cold butter

2 cup self-rising flour

1 cup chopped pecans

1 pkg (8oz) cream cheese, softened

2 cups confection sugar

5 medium ripe peaches, peeled, and thinly sliced

1 container cool whip thawed

1 container peach glaze or peach glaze recipe (see below)

In a bowl, cut butter into the flour until crumbly.  Stir in pecans.  Press into a greased 9×13″ pan.  Bake 350 for 25 min until lightly browned.  Cool.

In a small mixing bowl, beat cream cheese and confectioners sugar until fluffy.  Beat in whipped topping.  Spread over crust.  Arrange peaches over cream cheese layer.  Carefully spread glaze over peaches.  Cover and refrigerate until serving.

Peach Glaze: 1/2 cup sugar, 1/4 cup cornstarch, 1 1/2 cup water.   Combine sugar, cornstarch and water in saucepan.  Cook until clear and thick.  Add 1 regular size package of peach jello.  Cool until slightly thick and pour over peaches.
