Corn Fritters

  • 2 cups cut, fresh corn (about 6 ears)
  • slightly less than 1 cup milk
  • 1 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 egg
  • oil for frying
  • maple syrup

 

Cut 2 cups worth of corn off of cob and reserve liquid (cut off just the tips of the kernels and then scrape the cob to get the most liquid). Add enough milk to the reserved liquid to measure 1 cup total.

Sift together all-purpose flour, baking powder, and salt. Beat egg and combine with milk mixture and corn. Add to dry ingredients. Mix just until flour is moistened.

Drop batter in from tablespoon into deep, hot frying oil. Fry until golden brown, about 3 minutes. Drain on paper towels.

Serve with warm maple syrup and enjoy!
