Zucchini Lasagna

Ingredients:

  • 1 large or 2 medium zucchini
  • 1 pound ground beef
  • 1 small onion chopped
  • 1 medium tomato chopped
  • 1 cup tomato sauce
  • ¼ cup water
  • Salt and Pepper to taste
  • Pinch of Oregano
  • Pinch of Basil
  • 1 cup ricotta cheese
  • ¾ cup grated mozzarella cheese

Directions:

Preheat oven to 350 degrees. Cut off ends of zucchini, wash and slice into thin slices lengthwise. Brown ground beef and drain, add onion, tomato, tomato sauce and water along with seasonings. Simmer for 10-12 minutes. In oblong baking dish, start with a layer of zucchini, meat mixture and cheeses and the last layer should end with meat and cheeses on top. Bake 30 minutes or until cheese is bubbly and golden brown.
